Mango Colada Mocktail

Well, the summer heat is in full swing and it’s time for another great drink! I love a good virgin piña colada, but this time I was thinking outside the box so I swapped pineapples for mangoes, and threw a splash of lime in there to create this fabulous Mango Colada Mocktail!

There’s nothing better than relaxing in the shade, with my sunglasses on, and a cool drink in my hand as I watch my kids splash in the sprinklers in the yard. And with this drink, they can come up and enjoy a few sips with me. This drink is special too because it has one of my favorite ingredients in it: CREAM OF COCONUT! It comes in a can from the alcoholic mixers aisle in the store and I use it in fruit dip, cakes, and drinks! It’s seriously a summer staple in my pantry! If you haven’t used it, run to the store, NOW!

Mango Colada Mocktail

Ingredients

  • 1 (16oz) bag frozen mango chunks
  • 1/2 cup cream of coconut (found in the aisle with the alcoholic mixers)
  • 1/2 cup coconut milk (plus more if needed)
  • juice of 2 limes
  • 1 frozen banana

Instructions

  1. Place all ingredients into a blender. Blend until smooth, adding extra coconut milk, if needed.
