Sausage and Sweet Potato Hash

We are those kind of people who like breakfast for any meal, but since dinner tends to be a warm, filling meal, I’ve made this hash (good for breakfast, brunch, or dinner) full of hearty ingredients, like smoked sausage, bell peppers, and onions, with my favorite cheater ingredient: sweet potato fries!
This meal makes me so excited to start growing my veggies for the year, so I can grab a pepper and onion straight out of our square foot garden to use for dinner! Yes, we totally had this for dinner! I told you! We are breakfast for dinner people. At least twice, monthly. We LOVE Alexia Sweet Potato Fries with our burgers all summer long, because they are high quality, all natural, and so delicious. And, as you can see from today’s post, they’re totally versatile for more things other than eating them straight from the bag! We also love their onion rings, and crinkle cut fries to change things up a bit every now and then. š
If you haven’t seen these Alexia frozen products, head to your local Walmart, and look in the frozen potato section, next to the frozen snacks and appetizers. They also have tator tots and waffle fries (more of our faves!)
Today’s recipe is using the frozen potatoes we buy the most: Alexia Sweet Potato Fries! Just throw them in the fridge the night before to thaw, then cook breakfast in the morning or wait until the evening to pull them out with your other ingredients: smoked sausage, a green bell pepper, an onion, eggs (1 per person), and salt and pepper for seasoning.
Cut, dice, slice, the sausage, pepper, and onion, the way you prefer, and then cut the sweet potato fries in 1 to 1 1/2-inch pieces.
Heat up some olive oil in a large, deep frying pan. Add the peppers and onions. Cook until soft.
Add the smoked sausage and some salt and pepper. The hotter your pan, the more of a sear and caramelization you will start to get on the veggies and sausage.
Lastly, add the sweet potato fries and cook them until heated through and browned from the pan. They will be soft, and that’s okay. Season to taste with salt and pepper, or even seasoned salt, depending on your preference.
In a separate frying pan, cook an egg on medium-low heat, sunny-side up, seasoned with salt and pepper. Wait until the white of the egg is no longer transparent, but a solid white color.
Spoon some hash into a bowl or plate, and top it with the egg! Enjoy!

Ingredients
- 1 Tbsp olive oil
- 1 green bell pepper, sliced or diced
- 1 onion, sliced or diced
- 1 (14oz) pkg smoked sausage, halved and then sliced
- 1 bag Alexia Sweet Potato Fries, cut into 1 to 1 1/2-inch pieces
- eggs, 1 per person
- salt and pepper, or seasoned salt
Instructions
