Isn’t there something coming up soon called the Super Bowl? Haha. I am not a sports fan, but I am a fan of getting together and sharing food! When I bring food to parties I want to impress my guests, and these vibrant tortilla pinwheels are pretty to look at and delicious to eat. The best thing about these kinds of appetizers is that you can customize it to whatever your favorite sandwich helpings are.

When you build tortilla pinwheels you basically have 5 layers:  The tortilla shell, meat (lunch meats or diced chicken), cheese (I prefer shredded so that it keeps the pinwheel nice and round and fills in the center), toppings (tomatoes, lettuce, etc) and something to bind it together and seal it shut, like mayonnaise or cream cheese.

The real secret to round pinwheels and keeping the filling inside is to roll it up tight, then wrap it up tight into plastic wrap, and let it refrigerate for an hour or two which helps keep it sealed. Then when you are ready to serve, take off the plastic wrap, and with a serrated knife, cut little 1 1/8″ slices, stack them all pretty, and serve them to your friends!

Spicy Turkey and Cheese Tortilla Pinwheels

Spicy Turkey and Cheese Tortilla Pinwheels

Every party needs something a little filling but still crazy yummy so you don't fill up on snacks all day. These pinwheels are perfect!

Ingredients

  • 1 extra large Don Pancho spinach tortilla
  • 8 slices Oscar Meyer deli fresh turkey
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced roma tomatoes
  • green leaf lettuce
  • 1/4 cup light mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp paprika
  • 1/8 tsp chili powder
  • 1/8 tsp cayenne pepper

Instructions

  1. Combine ingredients in a bowl; whisk until combined.
  2. Spread the mayo on the tortilla so that it is thin on one half and thick on the other half.
  3. Place 8 slices of turkey on the tortilla covering the thick side of mayonnaise.
  4. Sprinkle the shredded cheddar and diced tomatoes across the center of the tortilla. Place a few leaves of lettuce across the center of the tortilla alongside the tomatoes and cheese.
  5. Starting on the meat side, roll the tortilla up as tight as you can. Immediately wrap tightly in plastic wrap & refrigerate until ready to cut & serve. *Refrigeration does help the mayonnaise bind the pinwheel shut.
  6. Remove plastic wrap & use a serrated knife to cut into 1⅛" pieces.

Roast Beef Tortilla Pinwheels

  • 8 slices Oscar Meyer deli fresh roast beef
  • 1/4 cup shredded mozzarrella cheese
  • 1/4 cup light mayonnaise or light miracle whip
  • 1 tsp dijon/spicy mustard
  • green leaf lettuce

Instructions

  1. Spread the mayo/miracle whip with the mustard on the tortilla so that it is thin on one half and thick on the other half.
  2. Place 8 slices of roast beef on the tortilla covering the thick side of mayonnaise/miracle whip.
  3. Sprinkle the shredded mozzarella across the center of the tortilla. Place a few leaves of lettuce across the center of the tortilla alongside the cheese.
  4. Starting on the meat side, roll the tortilla up as tight as you can. Immediately wrap tightly in plastic wrap & refrigerate until ready to cut & serve. *Refrigeration does help the mayonnaise bind the pinwheel shut.
  5. Remove plastic wrap & use a serrated knife to cut into 1⅛" pieces.
