And berry-season. Happy eat-all-the-berries-in-EVERYTHING season. How do you enjoy YOUR berries this time of year? Me? I prefer my berries in triple-dose style in an extra-tall parfait glass with lots of yogurt and my favorite granola of all time. I mean who doesn’t love the sound of that? So friends. Let’s get parfait’n’ shall we? Is that even a word? Moving on.

We’re gonna start by discussing my favorite granola in the whole wide world. And in case you’re wondering, YEPPERS it is homemade. Because that’s just how this granola-snob rolls. 😉  

You can certainly use any kind of granola you desire in these parfaits, but I absolutely INSIST that you try my recipe. Literally the best granola you’ll ever taste. Pinky promise.

Up next….we’re doin’ the BERRIES. In all their triple glory. With sliced kiwi thrown into the mix to boot, because the more fruit the merrier. Throw in your faves if your tastebuds are craving the FUN.

Triple-Berry Granola Parfaits with Whipped Coconut Yogurt

These pretty granola parfaits are loaded with a triple-delight of juicy berries, crispy granola, and the best coconut yogurt you'll ever taste. Destined to become your new go-to breakfast!

Ingredients

  • 1 cup sliced fresh strawberries
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 medium kiwi, thinly sliced
  • 1 Tablespoon sugar
  • 1 1/2 cups vanilla yogurt
  • 1/2 cup whipped coconut cream
  • 4 cups granola

Instructions

  1. In a medium bowl, combine berries and sugar. Let stand 10 minutes for the berries to release their juices.
  2. Meanwhile, in a separate medium bowl with a handheld electric mixer, beat the yogurt and coconut cream on medium speed until smooth and creamy.
  3. Assemble the parfaits: Working in layers, divide granola, berry mixture, and yogurt between 4 parfait glasses (you should have 3 layers). Serve parfaits immediately after assembling.
