Morning Glory Muffins

Yield 12 muffins


  • 2 cups whole wheat pastry flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups carrots, grated
  • 1 apple, peeled, cored, and finely chopped
  • 1 cup raisins
  • 1/2 cup applesauce
  • 1/2 cup olive oil
  • 1/2 cup honey
  • 2 tsp pure vanilla extract
  • 2 Tbsp walnuts


  1. Preheat oven to 375*F.
  2. In a large bowl, combine flour, cinnamon, baking powder, baking soda, and salt. Stir well.
  3. In a separate bowl, mix together carrots, apple, raisins, applesauce, olive oil, honey, vanilla, and walnuts. Pour into dry ingredients and mix just until moistened.
  4. Lightly spray muffin pan with olive oil cooking spray and scoop about ¼ cup batter in each muffin.
  5. Bake for 20 to 30 minutes. Enjoy!
