Pumpkin Streusel Pudding Cookies



  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 (3.4oz) box pumpkin spice instant pudding mix (dry, do not prepare)
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 1/4 cups flour
  • 1/2 tsp pumpkin pie spice


  • 2 Tbsp butter, cold
  • 2 Tbsp sugar
  • 2 Tbsp brown sugar
  • 2 Tbsp flour
  • 1/4 tsp cinnamon


  1. Make streusel topping by combining sugars, flour & cinnamon. Cut butter into dry ingredients until small crumbs form. Set aside.
  2. To make the cookies: cream butter, brown sugar, & sugar together in a stand mixer. Add dry pumpkin spice instant pudding mix & beat until well combined.
  3. Add eggs & vanilla & mix well. Scrape bowl.
  4. Add flour, baking soda, & pumpkin pie spice & beat until well combined.
  5. Roll dough into 1" balls. Gently press some of the streusel topping onto the tops of the rolled dough balls. Place them on a greased/parchment lined baking sheet & bake at 350*F for 8-10 minutes.
