Creamy Cauliflower and Mashed Potatoes

Lightened-up Creamy Cauliflower and Mashed Potatoes is a healthier side dish, with half cauliflower and half potatoes. Velvety smooth and creamy with less carbs and no milk, sour cream, or butter.

Ingredients

  • 1 lb potatoes, peeled and diced (about 3 cups; 2-3 potatoes, any variety -- I used red)
  • 1 lb cauliflower florets (about 3 cups; 1 head cauliflower)
  • 2 wedges Laughing Cow Creamy Swiss Garlic & Herb Cheese
  • 1 tsp minced garlic
  • salt and pepper, to taste
  • cooking liquid (water)

Instructions

  1. Boil or steam diced potatoes and cauliflower florets, separately or together, until very soft.*

    INSTANT POT: Pour 1 cup of water in bottom of pot. Place steamer basket inside. Add the potatoes and cauliflower. Cook on Manual, High Pressure, 6-7 minutes, Quick Pressure Release.

  2. Remove cauliflower and potatoes from pot and SAVE THE COOKING LIQUID. Press vegetables through a potato ricer, mash with a potato masher, or beat with an electric mixer in a large bowl.

  3. Mix in the Laughing Cow Cheese, minced garlic, salt and pepper to taste, and just enough of the cooking liquid to achieve the desired consistency. (I used about 2 Tbsp to 1/4 cup because my cauliflower had a lot absorbed a lot of liquid.) Enjoy!

Recipe Notes

BOIL: Cauliflower 12-15 minutes / Potatoes 15-20 minutes.

STEAM: Cauliflower 10 minutes / Potatoes 20 minutes.
