Frozen Pink Lemonade Pie

Yield 8 servings


  • 1 (8oz) package neufchatel cream cheese
  • 1 (14oz) can sweetened condensed milk
  • 1/2 (12oz) can frozen pink lemonade concentrate, thawed
  • 2 to 3 drops red or pink food coloring, optional
  • 1 1/2 cups light cool whip (approximately 1/2 of an 8oz tub)
  • 1 8 or 9-inch baked pie crust
  • lemons for garnish, optional


  1. Beat cream cheese in a large bowl, with an electric mixer on medium-high speed, until fluffy. Gradually beat in the sweetened condensed milk, lemonade concentrate, and food color, if desired, until blended.
  2. Fold in whipped topping. Pour into prepared crust. Freeze for 6 hours or until set (overnight is best).
  3. Slice and serve immediately garnished with lemon slices, if desired.
