Morning Glory Muffins

Servings 12 muffins


  • 2 cups whole wheat pastry flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups carrots, grated
  • 1 apple, peeled, cored, and finely chopped
  • 1 cup raisins
  • 1/2 cup applesauce
  • 1/2 cup olive oil
  • 1/2 cup honey
  • 2 tsp pure vanilla extract
  • 2 Tbsp walnuts


  • Preheat oven to 375*F.
  • In a large bowl, combine flour, cinnamon, baking powder, baking soda, and salt. Stir well.
  • In a separate bowl, mix together carrots, apple, raisins, applesauce, olive oil, honey, vanilla, and walnuts. Pour into dry ingredients and mix just until moistened.
  • Lightly spray muffin pan with olive oil cooking spray and scoop about ¼ cup batter in each muffin.
  • Bake for 20 to 30 minutes. Enjoy!
