Baymax Cupcakes {Big Hero 6}

When the previews of Big Hero 6 were showing, our whole family was super excited to go watch it in the theater! We went shortly after it was available and we absolutely LOVED the movie! I knew as soon as it was in stores, I would be picking up a copy to take home!
Well, that day was Tuesday, February 24th, so if you are behind on the times, head to your local Walmart and pick up this exclusive gift set Blu-Ray/DVD pack (pictured below). You can find a big display of Big Hero 6 movies in the front of the store when you walk in by the registers.

I wish you could have seen how excited my kids were when we picked up the movie! Pure bliss! In celebration of the movie release, I created these Baymax Cupcakes for you to enjoy as you watch the movie at home! Think of all the smiles and giggles your kids will have when they see these adorable things. They’re EASY too!
All you need to do is to whip up a batch of boxed cupcakes (I usually do 18 cupcakes instead of 24 and bake them at 400 degrees Fahrenheit for 11 to 13 minutes so they are nice and peaked on top). We went with chocolate because the frosting is marshmallow frosting (which you will also need to make before you assemble these cupcakes). I think chocolate and marshmallows go together quite well, but use whatever flavor you prefer. Then all you need are large marshmallows and black decorating gel.
Pipe some marshmallow frosting (recipe to follow) on top of the cupcakes with a round tip. This frosting is kind of soft and will droop down the longer it sits on the cupcake, which is okay, just FYI.
Squeeze two black dots one of the flat ends of a large marshmallow. Repeat for each cupcake (18). With a toothpick, drag some of the black gel of one dot towards the other dot to create a line between the two eyes. Allow the gel to sit and dry slightly for a few minutes.
Using another marshmallow, make two cuts from the bottom corners to the top middle, creating 3 triangles. You will use the outer triangles for arms. The fat ends will be the shoulders. Discard or eat the middle triangle piece. Repeat for 18 cupcakes.

Set the head on the top center of the frosting, and one marshmallow arm on each side of the head with the cut/sticky part touching the frosting and the fat end up by the head for shoulders. Repeat with each cupcake.
Repeat with the remaining cupcakes and get ready for a fun movie night!
The droopy marshmallow frosting makes me think of Baymax when he deflates himself a bit in the movie to fit in the window! So cute! How will your family be celebrating when you take the movie home?
Baymax Cupcakes {Big Hero 6}
Ingredients
- 15.25 oz (432 g) box cake mix, flavor optional
- ingredients to make cake mix, (oil, water, eggs)
- large marshmallows
- black decorating gel
- ½ cup (113 g) butter, room temperature
- 1 cup (120 g) powdered sugar
- 7 oz (198 g) jar marshmallow creme
- 1 tsp clear vanilla extract, or regular is fine
Instructions
- Mix up cake mix according to directions on package filling 18 paper cups instead of 24.
- Bake at 400 degrees Fahrenheit for 11 to 13 minutes. This creates tall peaks so you don’t use as much frosting.
- Prepare marshmallow frosting by beating the butter and powdered sugar with an electric hand mixer, it will be crumbly. Add half the marshmallow creme and vanilla extract. Beat again. Then add the remaining marshmallow creme and beat until combined. Scoop frosting into a piping bag fit with a round tip.
- ASSEMBLING THE CUPCAKES: Pipe some marshmallow buttercream on top of the cupcakes with a round tip. This frosting is kind of soft and will droop down the longer it sits on the cupcake, which is okay, just FYI.

Can these be frosted and kept in the fridge overnight or will the frosting completely fall?
I think they will be okay. Most of the settling happens shortly after they are frosted. Just don’t let plastic wrap touch the frosting. Storing them in a container with a lid would be ideal.

Cute! I do tasty food, but cute food, not so much. So I always admire people who have such creative ideas. I’m sure my kids would love things like this. I’ve heard Big Hero 6 is good, but at the moment I don’t have a clue what it’s about! I’ll have to look into it 🙂
I’ve gotten away from cute food, but I used to decorate cakes, gosh about 5 years ago now! These are pretty easy though, and you totally have to watch Big Hero 6! Super cute movie!
