These cheesecake brownies combine two of the best desserts in one pan: rich, fudgy chocolate brownies and smooth, creamy cheesecake. The brownie layer is deeply chocolatey, while the cream cheese mixture adds a sweet, slightly tangy contrast. Swirl the two together and you get gorgeous cream cheese brownies that look impressive but are surprisingly simple to make.

  • Unsalted Butter – You’ll need ½ cup (1 stick). Melting the butter makes these brownies quick and easy to mix.
  • Granulated Sugar – One cup sweetens the brownies and contributes to their texture.
  • Vanilla Extract – Enhances both the chocolate and cheesecake flavors.
  • Eggs – Two large eggs add structure, moisture, and richness to the brownie batter.
  • Unsweetened Cocoa Powder – I like using a combination of natural and Dutch-process cocoa powder for a rich, well-rounded chocolate flavor.
  • All-Purpose Flour – Measure the flour by stirring it first, then spooning it into your measuring cup and leveling off the top. Or weight it. This helps prevent accidentally adding too much flour.
  • Baking Powder – Just ¼ teaspoon gives the brownies a little lift without making them cakey.
  • Salt – Balances the sweetness and brings out the chocolate flavor.

For the Cheesecake Layer

  • Cream Cheese – Use an 8-ounce block of full-fat, block-style cream cheese and let it come to room temperature before mixing.
  • Granulated Sugar – Sweetens the cheesecake without overpowering the tanginess of the cream cheese.
  • Vanilla Extract – Adds extra flavor to the cheesecake layer.
  • Egg – One large, room-temperature egg gives the cheesecake structure and helps it bake up smooth and creamy.

How to Make Cheesecake Brownies

Start by preheating the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a couple inches of overhang so you can easily lift the brownies from the pan later. Lightly grease any exposed sides of the pan with cooking spray.

Step 1: Make the Brownie Batter

  1. Melt the butter in a large microwave-safe bowl. Add the granulated sugar and vanilla extract and whisk until combined.
  2. Add the eggs and mix well.
  3. Next, whisk in the cocoa powder until completely incorporated.
  4. Add the flour, baking powder, and salt and mix until combined. Set the brownie batter aside for 10 minutes. This short resting time allows the batter to cool and thicken before you assemble the brownies. It also helps the batter create a crackly top.

Step 2: Make the Cheesecake Batter

  1. While the brownie batter rests, beat the softened cream cheese, sugar, and vanilla together with an electric hand mixer. Scrape down the sides and bottom of the bowl, then mix again until the cream cheese mixture is completely smooth.
  2. Add the room-temperature egg and mix just until incorporated.

Step 3: Assemble the Cream Cheese Brownies

  1. Before adding the brownie batter to the pan, reserve ½ cup for the swirl on top. Spread the remaining brownie batter evenly into the prepared pan.
  2. Pour the cheesecake batter over the brownie layer and gently spread it into an even layer.
  3. Dollop the reserved brownie batter over the cheesecake.
  4. Use a butter knife, skewer, or toothpick to swirl the brownie batter into the cream cheese layer. (Don’t over-swirl. Less is more here. Try making a few gentle figure-eight motions through the batter. This creates distinct ribbons of chocolate and cheesecake instead of mixing the two layers together.)

Step 4: Bake

  • Bake the cheesecake brownies at 350°F for about 30 minutes.
  • To check for doneness, insert a toothpick into the center. It should come out with a few moist brownie crumbs or some thick, baked cheesecake attached. If the batter on the toothpick still looks wet, give the brownies another minute or two in the oven.
  • Allow the brownies to cool completely before using the parchment paper to lift them from the pan and cut them into squares.

How to Cut Cheesecake Brownies

For the best-looking squares, let the brownies cool completely first.

Use the parchment-paper overhang to lift the whole batch out of the pan and place it on a cutting board. Use a sharp knife to cut the brownies into squares, rinsing and wiping the blade clean between cuts if you want especially neat edges.

For even cleaner cuts, you can chill the brownies before slicing. I cut them into 16 squares (4×4 rows).

Storing and Freezing

TO STORE: Store leftover cream cheese brownies in an airtight container, with parchment paper separating any layers, in the refrigerator for up to 1 week. They’re delicious chilled, or you can let an individual brownie sit at room temperature for a few minutes before serving for a softer texture.

TO FREEZE: Let the cheesecake brownies cool completely and cut them into individual squares. Place the brownies in a freezer-safe airtight container, separating layers with parchment paper as needed. Freeze up to 2-3 months. Thaw the brownies in the refrigerator before serving.

Recipe Notes

  • Use block-style cream cheese. The firm blocks of cream cheese work best for baking. Spreadable cream cheese sold in tubs has a different consistency and can affect the cheesecake layer.
  • Bring the cream cheese and egg to room temperature. Room-temperature ingredients blend together more smoothly, giving you a creamier cheesecake layer without little lumps of cream cheese.
  • Measure the flour carefully. Too much flour can make brownies dry or cakey. Weigh it, or stir the flour, spoon it into the measuring cup, and level the top rather than scooping directly from the container.
  • Let the brownie batter rest. Don’t skip the 10-minute rest after mixing your brownie batter. It gives the batter time to cool and thicken before assembling the layers. It also helps the batter create a crackly top.
  • Don’t over-swirl. A few figure-eight motions are plenty. You want to see separate ribbons of cheesecake and chocolate after the brownies bake.
  • Don’t wait for a completely clean toothpick. These are fudgy brownies, so a few moist crumbs are exactly what you want. A completely clean toothpick can mean the brownies have baked longer than necessary.
  • Cool before cutting. The brownies and cheesecake layer both need time to set. Letting the pan cool completely will make the brownies much easier to slice. You can throw the pan in the fridge to speed things along.

What Kind of Cocoa Powder Should I Use?

I like using half natural cocoa powder and half Dutch-process cocoa powder in these cheesecake brownies.

Natural cocoa tends to have a brighter, more traditional, sharp and fruity cocoa flavor, while Dutch-process cocoa is darker and has a smoother, deeper chocolate flavor. Using a combination gives the brownie layer the best of both.

If you have both types in your pantry, this is a great recipe for using them together. Hershey’s Special Dark Cocoa also works well and is basically a combination of both cocoa types.

FAQs

Can I make cheesecake brownies without a mixer?

You can mix the brownie batter by hand with a whisk or spoon. For the cheesecake layer, however, an electric hand mixer makes it much easier to get the cream cheese completely smooth.

Why does my cheesecake layer have lumps?

The cream cheese was most likely too cold. Let the block of cream cheese come to room temperature before beating it with the sugar and vanilla. The egg should also be at room temperature so it blends smoothly into the cream cheese mixture.

Can I use cream cheese from a tub?

Block-style cream cheese is recommended for these brownies. Tub-style cream cheese is formulated to be more spreadable and can give the cheesecake layer a different consistency.

Can I double this recipe?

Since changing the pan size and amount of batter can affect the baking time and thickness of both layers, I recommend making the recipe as written in an 8×8-inch pan.

Should cheesecake brownies be refrigerated?

Yes. Because these brownies contain a baked cream cheese layer, store leftovers covered in the refrigerator.

Rich, fudgy cheesecake brownies with a smooth cream cheese layer and beautiful chocolate swirls. These easy cream cheese brownies combine two classic desserts in one irresistible treat!

Ingredients

Brownies

  • ½ cup (113 g) unsalted butter, (1 stick)
  • 1 cup (200 g) granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 6 Tbsp (30 g) unsweetened cocoa powder, (I use half natural and half Dutch process)
  • ½ cup (63 g) all-purpose flour, (stir, spoon & level)
  • ¼ tsp baking powder
  • ¼ tsp salt

Cheesecake

  • 8 oz (226 g) block-style cream cheese, room temperature
  • ¼ cup (50 g) granulated sugar
  • ½ tsp vanilla extract
  • 1 large egg, room temperature

Instructions
 

  • Preheat oven to 350℉. Line an 8×8-inch baking pan with parchment paper leaving a couple inches of overhang for easy lifting. Use cooking spray to grease the sides not covered with paper. Set aside.
  • BROWNIES: In a large microwaveable bowl, melt butter. Add sugar and vanilla. Whisk to combine. Add eggs and mix well. Add cocoa; mix completely. Add flour, baking powder, and salt; mix well. Set aside to cool and thicken for 10 min.
  • CHEESECAKE: In another large bowl, beat together the cream cheese, sugar, and vanilla with an electric hand mixer. Scrape the bowl and mix again until smooth. Then add the egg and mix until incorporated. Set aside.
  • ASSEMBLING: Reserve 1/2 cup of the brownie batter for topping. Pour the remaining brownie batter into the prepared pan and spread evenly.
  • Pour the cheesecake batter evenly over the brownie batter and spread evenly.
  • Dollop the reserved 1/2 cup of brownie batter over the cream cheese layer. Use a butter knife, skewer, or toothpick to swirl the cheesecake together with the dollops of brownie batter. (TIP: Don’t over-do the swirling. Less is more. It might be helpful to make “figure 8” swirls.)
  • BAKE at 350℉ for 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs of brownie batter or thick baked cheesecake stuck to it. If it still looks wet, bake a few minutes more.
  • Cool completely before lifting the parchment out of the pan to cut the brownies into squares.
