S’mores Brownies

S’mores are an all American campfire treat made famous by the Girl and Boy Scouts of America. The graham cracker sandwich with a chocolate bar and toasted marshmallow is so delicious that everyone wants “some more.”

Our family can’t get enough of that triple threat combination with recipes like my S’mores Cookie Bars, S’mores Pizza, and S’mores Cereal Bars to name a few.

So I figured why not put that graham cracker, marshmallow, and chocolate combo on a brownie, and S’mores Brownies were created.

Boxed Mix with a Twist

The best part about this recipe is how ridiculously easy it is. If you can make a boxed mix of brownies, break up some graham crackers and chocolate bars, and sprinkle some mini marshmallows, you are golden.

S’more Brownies Ingredients

You only need seven ingredients to make this easy brownie recipe:

Ingredients for S'mores Brownies: Brownie Mix, Eggs, Oil, Water, Chocolate Bars, Graham Crackers, and Mini Marshmallows.
  1. Brownie Mix — big enough for a 13×9-inch pan; typically labeled “family size”
  2. Eggs
  3. Oil
  4. Water
  5. Graham Crackers – broken or cut into bite-size pieces
  6. Miniature Marshmallows
  7. Hershey’s Milk Chocolate Bars, broken into squares

Make the Brownies

  • Combine the brownie mix, eggs, oil, and water as directed on the box of brownies. (FYI: We love Duncan Hines Dark Chocolate Fudge Brownie Mix. Be sure to follow the directions for “cakey” brownies since they will be topped with stuff.)
  • Then pour the batter into a greased 13×9-inch baking pan.
  • Bake at 350 degrees Fahrenheit for 20 minutes or until just about done baking. i.e. a toothpick comes out just slightly wet or with a few moist crumbs when inserted into the center.

Add the S’mores Toppings and Bake Again

  • Once the brownies are just under-baked, pull them out of the oven and sprinkle them with graham cracker pieces and mini marshmallows. Then top the graham crackers and marshmallows with the chocolate squares.
  • Return pan to oven and bake at 350˚F for an additional 5 minutes, until the marshmallows have puffed up and the chocolate has melted.

Cutting and Serving

The hardest part of this recipe is cutting and serving these smores brownies, IF you do it while they are warm.

Of course you can wait for the brownies to cool completely, but aren’t s’mores meant to be eaten warm?! (YES!) Just know they will be a gooey mess. (Just the way we like it!)

TO CUT S’MORES BROWNIES WHILE WARM: Spray a knife with cooking spray and then cut the brownies. Keep spraying the knife as needed to prevent sticking.

Keep leftovers tightly covered in the pan at room temperature up to 3 days. Note: Graham crackers will soften with storing.

Ingredients

  • 18.3 oz (520 g) box family size brownie mix, (for a 13×9" pan)
  • 2 large eggs, (or as written on box for "cakey" brownies)
  • cup (80 ml) vegetable oil, (or as written on box)
  • cup (80 ml) water, (or as written on box)
  • 6 graham crackers, cut or broken into bite-size pieces
  • 2 cups (90 g) miniature marshmallows
  • 12 (153 g) snack-size Hershey’s Milk Chocolate Bars, broken into squares*

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Combine the brownie mix, eggs, oil, and water as directed on the box for "cakey" brownies. Then pour the batter into a greased 13×9-inch baking pan and spread evenly.
  • Bake at 350˚F for 20 minutes or until just about done baking. i.e. a toothpick comes out just slightly wet or with a few moist crumbs when inserted into the center.
  • Once the brownies are just under-baked, pull them out of the oven and sprinkle them with graham cracker pieces and mini marshmallows. Then top the graham crackers and marshmallows with the chocolate squares.
  • Return pan to oven and bake at 350˚F for an additional 5 minutes, until the marshmallows have puffed up and the chocolate has melted.
  • To cut while warm, spray a knife with cooking spray and then cut the brownies. Keep spraying the knife as needed to prevent sticking. OR wait for brownies to cool completely before cutting into 5×4 rows for 20 brownies.
  • Store brownies in the pan covered tightly with plastic wrap or foil for up to 3 days. Note: Graham crackers will soften with storing.

Notes

  • May substitute 2-3 regular size Hershey’s bars or 2 cups (one 10-12oz bag) of chocolate chips for the snack size bars.
